SMOKY, TANGY, GARLICKY WITH A COOL CREAMY BASE

INGREDIENTS
BROCCOLI & GARLIC OIL
- 1 large head broccoli, cut into large florets
- 2 tbsp olive oil
- 2 garlic cloves, thinly sliced
- 1 lemon (zest + juice)
- Chili flakes (optional)
- Sea salt
YOGOURT BASE
- 3/4 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper
- Optional: pinch of za’atar, cumin, or grated garlic
STEPS
- Toss broccoli with olive oil and sea salt. Roast or grill at 450°F (230°C) until deeply charred, about 15–20 minutes.
- In a small pan, gently fry garlic slices in olive oil until golden and crispy.
- Mix yogurt, lemon juice, olive oil, and optional spices in a bowl. Spread on serving plate.
- Place charred broccoli on top. Drizzle with garlic oil, finish with chili flakes and lemon zest.
