INGREDIENTS
- 300 g (10 oz) sashimi-grade yellowfin tuna (Thunnus albacares)
- 1 ripe passion fruit
- Zest and juice of 1 lime or mandarin lime (calamansi)
- Fleur de sel or coarse sea salt
- ¼ small red onion, very thinly sliced
- Fresh cilantro leaves
- Extra-virgin olive oil
METHOD
- Using a very sharp knife, cut the tuna into clean, even rectangular crudo-style pieces.
- Arrange the tuna neatly on a chilled plate.
- Lightly season with fleur de sel.
- Cut the passion fruit in half, scoop the pulp into a bowl, and mix with the lime zest and juice.
- Spoon the passion fruit-lime mixture gently over the tuna.
- Add thin slices of red onion and fresh cilantro leaves.
- Finish with a drizzle of high-quality olive oil.
TO SERVE
Serve immediately while the tuna is cold and pristine.
