YELLOWFIN TUNA CRUDO WITH PASSION FRUIT & LIME

SILKY RAW TUNA, BRIGHT PASSION FRUIT, CITRUS ACIDITY, HERBS, OLIVE OIL, PURE SIMPLICITY.

INGREDIENTS

  • 300 g (10 oz) sashimi-grade yellowfin tuna (Thunnus albacares)
  • 1 ripe passion fruit
  • Zest and juice of 1 lime or mandarin lime (calamansi)
  • Fleur de sel or coarse sea salt
  • ¼ small red onion, very thinly sliced
  • Fresh cilantro leaves
  • Extra-virgin olive oil

METHOD

  1. Using a very sharp knife, cut the tuna into clean, even rectangular crudo-style pieces.
  2. Arrange the tuna neatly on a chilled plate.
  3. Lightly season with fleur de sel.
  4. Cut the passion fruit in half, scoop the pulp into a bowl, and mix with the lime zest and juice.
  5. Spoon the passion fruit-lime mixture gently over the tuna.
  6. Add thin slices of red onion and fresh cilantro leaves.
  7. Finish with a drizzle of high-quality olive oil.


TO SERVE

Serve immediately while the tuna is cold and pristine.
