FRESH YELLOWFIN TARTARE WITH CITRUS, CILANTRO, JALAPEÑO AND PLANTAIN CHIPS.

INGREDIENTS
For the Tartare
- 1 yellowfin tuna loin, skinless, bloodline removed, cut into small dice
- 2 tbsp finely diced red onion
- 2 tbsp finely chopped cilantro
- 1 jalapeño, finely diced (seeds optional)
- Zest of 1 Costa Rican orange lime (or regular lime)
- Juice of 1-2 orange limes (or regular limes), to taste
- 2-3 tbsp good olive oil
- Salt & freshly cracked black pepper
For Garnish
- Segments of orange lime (or lime supremes)
- 1 ripe avocado, sliced into thin quarter wedges
- Extra olive oil
- Flaky salt
To Serve
- Plantain chips (patacones chips or crispy store-style)
METHOD
1) Prepare the Tuna
Cut the yellowfin tuna loin into clean, even small cubes. Keep chilled.
2) Build the Tartare Base
In a mixing bowl, combine:
- diced tuna
- red onion
- cilantro
- jalapeño
- lime zest
- lime juice
- olive oil
- salt & pepper
Mix gently so the tuna stays intact. Taste and adjust acidity and salt.
3) Plate the Tartare
On a large flat plate, spread the tartare into a natural, even layer — not too tall, not compressed. Keep it relaxed and beach-style, Costa Rican inspired.
4) Garnish
Top the tuna with:
- orange lime segments (or lime supremes)
- thin avocado quarter-slices, arranged beautifully across the surface
Drizzle with more olive oil and finish with a pinch of flaky salt.
5) Serve
Serve immediately with crispy plantain chips on the side.
